After several years in the works, Harmons has debuted its new fresh-focused grocery store, Harmons Holladay Market, in Holladay, Utah. The state-of-the-art store is the retailer’s 18th location, and features an array of chef-prepared meals, certified organic produce, Harmons’ premium private label products and more than 2,300 local products.
Located in a well-established shopping development that had previously lacked grocery retail, Harmons used its 16,500-square-foot format to its advantage, providing greater product variety, service and selection within a smaller, approachable footprint, officials say.
“We’re providing the consumer with about two-thirds of what they would get as a variety in our large store,” which averages around 68,000 square feet, says Bob Harmon, co-owner and VP for the customer for West Valley City, Utah-based Harmons. “That worked out perfectly in this community because it is a walkable, shoppable environment.”
The three-story location boasts a sleek, modern design, featuring 58 windows that drench the store in natural light, modern stained and polished concrete floors, and LED lighting with contemporary fixtures.
To optimize the store’s smaller format, Harmons installed a metro racking system that allows the customization of shelf space to best fit the size and number of differing SKUs. The retailer also developed a subterrain to house its bakery and produce preparation clean rooms to allow for more square footage on the sales floor, says Harmon.
A Focus on Fresh
Half of the store’s 16,000 square footage is dedicated to fresh, says Harmon, which includes the bakery, deli, cafe bar, daily fresh-baked artisan bread, hot soup and a salad bar, as well as fresh sushi, salsas and dips. The store features 1,157 feet of on-the-go chef-prepared products, ranging from chilled soups and sandwiches to two- to four-person entrees and family meals.
Cheese and Charcuterie
In addition to the hot and chilled ready-to-go products, Harmons Holladay Market boasts a vast selection of specialty cheese, charcuterie and cured meats, as well as an olive bar. Cheesemongers are available to assist shoppers with their selections, as well as an Italian gelato and coffee bar featuring locally sourced coffee from Caffe Ibis.
Expanded Fresh Departments
Harmons Holladay Market includes a full meat department, with the same linear service case that can be found in a traditional Harmons store, including seafood and a full butcher case featuring antibiotic-free proteins, lamb, veal and grass-fed local beef. The retailer also offers its sausage grinds made daily in-house, including turkey, chicken and pork, as well as wild-caught seafood upon seasonal availability. “We’re also a part of the Monterey Bay Seafood Watch program, so we’re really trying to be good stewards about sustainability and our seafood,” says Harmon.
The new store is also offering the highest amount of organic produce, he adds, featuring about 120 different organic fruits and vegetables.
The store’s community-centered format offers its shoppers several spaces to relax and eat their on-the-go purchases, including a 2,400-square-foot outdoor mezzanine balcony overlooking the valley and Mt. Olympus, as well as a patio space located right off the sidewalk just below the balcony.
In addition, Harmons Holladay Market offers a modern cooking school where budding chefs can hone their culinary skills.
